This reading is called the Original Gravity (O.G.) a</span><span style="color:inherit;">fter your beverage has fermented you will take a Final Gravity (F.G) reading. Read on how to measure and find your % ABV (Alcohol by Volume).</span></p><p style="text-align:justify;color:inherit;"><span style="color:inherit;"><br></span></p><div><p style="text-align:center;color:inherit;"><span style="color:inherit;font-size:14px;font-weight:bold;">It’s easy to measure, just follow these steps!&nbsp;</span></p><p style="color:inherit;text-align:left;"><span style="color:inherit;font-size:14px;">1. Clean and sanitize your hydrometer.</span></p><p style="color:inherit;text-align:left;"><span style="color:inherit;font-size:14px;"><br></span></p><p style="color:inherit;text-align:left;"><span style="color:inherit;font-size:14px;">2. Place the hydrometer in middle of jar. It may naturally want to stick to the side of the test jar, so give it a gentle tap to encourage it to move towards the middle of the jar. If you’re testing in the primary fermenter, place the hydrometer near the center and clear away any surrounding bubbles to make it easier to read.</span></p><p style="color:inherit;text-align:left;"><span style="color:inherit;font-size:14px;"><br></span></p><p style="color:inherit;text-align:left;"><span style="color:inherit;font-size:14px;">4. With the jar or fermenter on a flat surface try to get your eyes as level as possible with the hydrometer. Note the reading at the bottom of the curve of the liquid surrounding the hydrometer. This curve is called the meniscus and the most accurate reading is given at the bottom. This is your Original Gravity (O.G.) write it down to determine your ABV in a few weeks.</span></p><p style="color:inherit;"><img src="/Blog%20Images/Hydrometer3.png" style="width:50px !important;height:219.8px !important;max-width:100% !important;"><span style="font-size:14px;"><span style="color:inherit;"><br></span></span></p><p style="text-align:left;"><span><span style="color:inherit;font-size:14px;">5. After a few weeks have passed and</span><span style="text-align:center;"><span style="color:inherit;font-size:14px;">&nbsp;your wine, beer, mead or cider has fermented you will take a Final Gravity (F.G) reading. Repeat Steps 1-4 to take another reading. This time the hydrometer will be much lower due to the </span><span style="font-size:14px;">absence</span><span style="color:inherit;font-size:14px;">&nbsp;of sugar and the increase of </span><span style="font-size:14px;">alcohol</span><span style="color:inherit;font-size:14px;">&nbsp;in your beverage. Likewise, you may choose to take a reading the first few days after you have pitched the yeast if you think your beverage is not fermenting. </div><div data-element-id="elm_PM9bGiq5TB29zFAJTeu2nQ" data-element-type="text" class="zpelement zpelem-text "><style> [data-element-id="elm_PM9bGiq5TB29zFAJTeu2nQ"].zpelem-text{ color:#0B232D ; font-size:16px; border-radius:1px; } </style><div class="zptext zptext-align-left " data-editor="true"><div style="color:inherit;"><p><br></p><p><b>What Is an Auto Siphon or Easy Siphon?</b></p><p>An auto siphon, also known as an easy siphon, consists of two pieces:</p><ul><li><b>Racking cane</b>: &nbsp;to which standard plastic tubing can be attached.</li><li><b>Wider sleeve</b>: &nbsp;into which the racking cane slides.</li></ul><p>These components are made from clear, rigid plastic and can be cleaned and sanitized with common wine and beer making solutions.</p><p><br></p><p><b>Sizes of Auto Siphons&nbsp;</b></p><p>Easy Siphons come in 3 sizes </p><ul><li>Mini: With a 3/8” or 5/16” diameter and 12 inches long, perfect for 1-gallon jugs.</li><li>Regular: Also 3/8” or 5/16” in diameter but 24 inches long, ideal for reaching the bottom of a 6-gallon carboy for transferring and bottling.</li><li>Large: With a 1/2” or 7/16” diameter and 25 inches long, this moves liquid 2.5 times faster than smaller models. Suitable for quick transfers but not recommended for bottling due to the speed and difficulty in controlling flow between bottles.</li></ul><p>All sizes are relatively inexpensive, ranging from $10-$14 USD.</p><p><br></p><p><b>Using Your Auto Siphon</b></p><p>While auto-siphon works well for most transfers, it can clog with oak chips or thick hop trub. One solutions is to sanitize a fine mesh bag and place it around the tip of the auto siphon to filter out particulates.</p><p><br></p><p><span style="font-weight:bold;">Here’s how to use your Auto Siphon: </span></p><ol><li><b>Setup Transfer</b>: Position the carboy or pail containing the wine or beer on a higher surface.</li><li><b>Place Receiving Vessel</b>: Arrange the sanitized vessel where you're transferring to about 3 feet lower.</li><li><b>Assembly</b>: Place the inner racking cane inside the wider sleeve, allowing it to slide freely.</li><li><b>Connect Tubing</b>: Attach the tubing to the inner racking cane.</li><li><b>Sanitize Inside</b>: Siphon sanitizer through the device. Place the siphon tip in sanitizer, then pull up and push down on the cane to start the flow. The period in which the juice ferments solely depends on the conditions and the yeast strain’s ability to convert sugar to ethanol. This guide is not based on time; it is based on measurement of specific gravity and temperature. Specific Gravity (S.G.) indicates the density of sugar in the juice. The amount of sugar accurately shows how much is left to convert to ethanol. The most accurate way to determine when to move to the next stage is to take a S.G. reading with a hydrometer. &nbsp;Taking and using these readings will help ensure a successful fermentation.&nbsp;<a href="https://www.craftedbottler.com/blogs/post/hydrometer" target="_blank" rel="noopener">Learn How to Use a Hydrometer Here</a></p><p><span style="font-weight:700;">Equipment:&nbsp;</span>Primary fermenter (plastic bucket and lid with ventilation system), stirring spoon, hydrometer, auto-siphon with tubing, 5 gallon carboy, 1 gallon jug, 2 stoppers and 2 airlocks. A thermometer and brewing belt may be used to monitor and control temperature.</p><p><span style="font-weight:700;">Helpful Tip:&nbsp;</span>Make sure&nbsp;<em>all&nbsp;</em>equipment (i.e. stirring spoon, etc.) is sanitized. Contaminated equipment can ruin the quality of the juice and the finished product.</p><p><span style="font-weight:700;"><u>Stage 1 - Bentonite, Pitching Yeast, Stirring and Monitoring</u></span></p><p style="text-align:center;"><a href="https://youtu.be/evo711VTk9I" target="_blank" rel="noopener"><span style="font-weight:700;"><u>Watch our Video on this Stage Here</u></span></a></p><p><span style="font-weight:700;">Step 1 - Mixing:&nbsp;</span>Carefully remove the bucket lid by removing the safety seal and pry off the lid.&nbsp; Let juice warm up to room temperature by either placing the bucket near a heat source or by using a brew belt.</p><p><span style="font-weight:700;">Optional -&nbsp;Add Nutrient:</span>&nbsp;Dilute OptiRED or OptiWHITE in 2 tablespoons water and mix. Add to the juice.</p><p><span style="font-weight:700;">Step 2 - Bentonite</span>: Bentonite is a negatively charged clearing agent that when added pre-fermentation, it will first settle to the bottom. But when the turbulence of fermentation begins, Co2 gas bubbles form in the wine and grab onto the Bentonite. The bubble will lift the Bentonite up to the surface, attracting positively charged solids as it rises. The bubble will burst when it reaches the surface, and the Bentonite particle will fall to the bottom again, still gathering positively charged solids as it sinks. This up and down circulation of Bentonite during fermentation clears your wine as it ferments. The self-stirring action of fermentation allows the Bentonite to collect the dead yeast and other particles as they are being produced, so that by the time you are ready to rack from the primary bucket, the Bentonite will have gathered a nice sediment of unwanted solids and dead yeast on the bottom. In addition, Bentonite helps keep wine stable during fermentation.</p><p><span style="font-weight:700;">Bentonite Instructions</span>: DO NOT DUMP dry Bentonite into the juice, it will instantly turn into a clump of mud and go straight to the bottom. It MUST BE HYDRATED mix 3 teaspoons in 1 cup HOT water, and whipped it into a slurry — preferably with a blender — and stir it into the juice.</p><p><span style="font-weight:700;">Step 3 - Test &amp; Record</span>: Using a sanitized hydrometer and thermometer measure and record the S.G. and temperature to establish a fermentation starting point.&nbsp; Recording your S.G. and temperature in a log will be helpful especially if you would like to duplicate your results next season.</p><p><span style="font-weight:700;">Step 4 - Pitch Yeast</span>: In a large cup add 4 ounces of warm chlorine free water. This water is to not exceed 104° F.&nbsp; Stir the contents of the yeast packet into warm water and be sure to break up any clumps.&nbsp; Let the mixture stand for 15 minutes.&nbsp; Bubbling or increase in mixture size is a good sign of rehydration.&nbsp; Add an equal part of Juice to the hydrated yeast mixture and let it stand another 15 minutes.&nbsp; Pour the yeast mixture into the bucket and stir gently.&nbsp;</p><p>Place the juice bucket with the lid lightly on or with a cheese cloth over it in an area that is 76° F. Fermentation is greatly affected by temperature. A brewing belt can be attached to the bucket to help control the temperature.</p><p><span style="font-weight:700;">Step 5 - Stir:</span>&nbsp;Twice a day stir gently for 5 minutes (with a sanitized spoon or paddle); preferably once in the morning and once in the evening. Continue to monitor the yeast activity (bubbling, foaming, etc.) that is most active in this stage. &nbsp;Readings of the S.G. decrease as sugar converts to alcohol.</p><p><span style="font-weight:700;"><u>Stage 2 -&nbsp;</u><u>Secondary Fermentation</u>: &nbsp;</span>Approximately 5-7 days after pitching yeast</p><p style="text-align:center;"><a href="https://youtu.be/4Dy6vj3vIrQ" target="_blank" rel="noopener"><span style="font-weight:700;">Watch our video on the Stage and Stage 3 Here</span></a></p><p><span style="font-weight:700;">Step 1 - Test:&nbsp;</span>Test the S.G. it is most ideal to transfer once the S.G. reaches 1.020. If your wine is not at 1.020 wait another 24-48 hours and re-test. NOTE:&nbsp;<u>If you want sweet wine,</u>&nbsp;ferment the wine to 1.005 and skip stirring as indicated in Step 2. When you transfer leave the dead yeast that has settled on the bottom behind.</p><p><span style="font-weight:700;">Step 2 - Stir:&nbsp;</span>Before transferring, stir the wine with a sanitized spoon/paddle to make sure that any yeast that has settled at the bottom of the bucket is transferred to the secondary. If active yeast is left behind, the fermentation will stop.</p><p><span style="font-weight:700;">Step 3 - Transfer:&nbsp;</span>Using a sanitized auto-siphon or racking cane, transfer the wine to sanitized secondary fermenters (a five gallon carboy and any left over into the 1 gallon jug) and fit the stoppers and airlocks in the openings. Although yeast activity will decrease as the fermentation process proceeds, the process will continue on in this phase.</p><p><span style="font-weight:700;">Step 4 - Monitor the S.G.:&nbsp;</span>In roughly 5-7 days check the S.G. if it is:</p><ul><li>990-0.996 the wine will be dry</li><li>000 the wine will be medium-sweet</li><li>Greater than 1.000 it will be a sweet wine.</li></ul><p>Allow fermentation to continue to your desired dryness. You should taste the wine to find the dryness or sweetness level that is desired. When the wine is where you like it, proceed to Stage 3 - Stabilization. Remember temperature controls the rate of fermentation, cool temperature will extend days required for fermenting your wine or stop the process prematurely leading to problem wine.</p><p><span style="font-weight:700;"><u>Stage 3 -&nbsp;</u><u>Stabilization</u></span>&nbsp;Note: Further fermentation will not occur after this step!</p><p><span style="font-weight:700;">Optional -&nbsp;Adding Oak:</span>&nbsp;Stage 3 is when you will add oak should you desire. The amount of Oak Chips you will want to use varies, but usually it will be in the area of ½ cup for every 5-6 gallon batch of wine.</p><p>OAK CHIPS MUST BE TREATED before adding them to your wine. There are two common methods that are used to do this. The first is to boil them in water for a few minutes. The second is to soak them for 24 hours in a solution of 1 quart cold water and ¼ teaspoon Sodium Metabisulphite. Keep the mix sealed in a jar during this time. Put the chips into the carboy before completing Step 3 below. They will float on top for the first few days but will eventually sink to the bottom.</p><p><span style="font-weight:700;">Step 1 - Transfer:&nbsp;</span>Do not stir the wine. Using a sanitized auto-siphon or racking cane, carefully transfer the wine from the 5 gallon carboy and the 1 gallon jug to a sanitized plastic bucket leaving dead yeast and sediment behind.</p><p><span style="font-weight:700;">Step 2 - Stabilize:&nbsp;</span>For every 6 gallons of wine:</p><p>Into ½ cup cool water dissolve:</p><ul><li>3 teaspoons of Potassium SORBATE</li><li>¼ teaspoon Potassium METABISUPHITE</li></ul><p>Pour the mixture into the wine and stir vigorously to de-gas the wine.</p><p><span style="font-weight:700;">Step 3 - Transfer back to carboy:&nbsp;</span>Sanitize the carboy, (add your oak chips if you are oaking), and refill with the stabilized wine to the top (it is essential to fill the carboy to the top with no room for air). Make sure the carboy is topped off. Wine exposure to oxygen can oxidize the wine and cause spoilage. Go by the “thumb rule” there should not be any empty space beyond the length of your thumb from the opening of the carboy. Any wine that does not fit in the carboy can be reserved and sealed in a one gallon jug or smaller to be used for topping up future rackings. Keep air space to a minimum in the smaller jug as well.</p><p>Replace the stopper and airlock and place in a&nbsp;<span style="font-weight:700;"><u>cool area</u></span>&nbsp;preferably less than 65° F.</p><p style="text-align:center;"><a href="https://youtu.be/T17dJ8mdsWQ" target="_blank" rel="noopener"><span style="font-weight:700;">Watch our video on adding more Oak &amp; Clarifying here</span></a></p><p><span style="font-weight:700;">Stage 4 -&nbsp;Aging &amp; Bottling</span>: Store the wine in the carboy in a dry, cool place for 35 to 45 days to allow further stabilization. You should notice the wine clearing and sediment collecting on the bottom of the carboy. Repeat the racking process every 35-45 days to achieve maximum clarity, if desired. At this stage, you may also consider clarifying agents (SuperKleer, Gelatin, etc.) if the wine is still cloudy or oak was used. When wine is clear, it is ready for bottling. Make sure bottles and closures are clean and sanitized. Filtering your wine is an option, but highly recommended.</p></div></div></div></div></div>

Ascorbic acid / vitamin C is fine.</span></p><p style="margin-bottom:2pt;"><span style="font-size:11pt;font-weight:bold;">Sanitize</span></p><p style="margin-bottom:6pt;"><span style="font-size:11pt;">Thoroughly sanitize all equipment and tools that will come into contact with the ingredients.</span></p><p style="margin-bottom:2pt;"><span style="font-size:11pt;font-weight:bold;">Add Juice to Fermenter</span></p><p style="margin-bottom:6pt;"><span style="font-size:11pt;">Fill a clean and sanitized primary fermenter with 5.5 gallons apple juice. (At a minimum a 6.5-gallon capacity fermenter should be used)</span></p><p style="margin-bottom:2pt;"><span style="font-size:11pt;font-weight:bold;">2. TEST AND ADDITIONS</span></p><p style="margin-bottom:2pt;"><span style="font-size:11pt;">--OPTIONAL: If the juice is unpasteurized, add a small amount of sulfite (1/4 tsp </span><span style="font-size:11pt;font-weight:bold;">potassium metabisulfite</span><span style="font-size:11pt;"> per 5 gallons or). Blend with a little juice to dissolve, then add to the bulk of the batch. Let stand for 24 hours.</span></p><p style="margin-bottom:2pt;"><span style="font-size:11pt;">After 24 hours:</span></p><p style="margin-bottom:2pt;"><span style="font-size:11pt;">--Add </span><span style="font-size:11pt;font-weight:bold;">pectic enzyme</span><span style="font-size:11pt;"> at the rate of 1/2 tsp per gallon. </span></p><p style="margin-bottom:2pt;"><span style="font-size:11pt;">--Add </span><span style="font-size:11pt;font-weight:bold;">yeast nutrient</span><span style="font-size:11pt;">. Roughly 1/2 tsp per gallon is a good starting point. Be prepared to add more once fermentation is well under way.</span></p><p style="margin-bottom:2pt;"><span style="font-size:11pt;">--Check the gravity with a hydrometer or refractometer. Record the result. This number will help determine the alcohol by volume of the cider, as well as act as a window into the fermen&#x1f;tation process. </span></p><p style="margin-bottom:2pt;"><span style="font-size:11pt;">--OPTIONAL: Chaptalize (add sugar). If you’d like cider with a higher ABV, add sugar at this time. The sugar will ferment out entirely, increasing alcohol content, thinning the body, and amplifying acidity. Partially refined and darker sugars are more prone to affect the flavor. One pound of sugar in 5 gallons will add approximately one percent alcohol by volume. Belgian candi sugars, honeys, or plain corn sugar all work well and have unique effects.</span></p><p style="margin-bottom:2pt;"><span style="font-size:11pt;">-- Add </span><span style="font-size:11pt;font-weight:bold;">acid blend</span><span style="font-size:11pt;">. Most juice, especially juice made from later season apples, will have a lot of sweetness, but little acid. Acid helps to balance the cider by adding sharp, crisp char&#x1f;acter. Small amounts of </span><span style="font-size:11pt;font-weight:bold;">acid blend</span><span style="font-size:11pt;"> can be added to taste, up to one tablespoon in five gallons. To ensure more accuracy and repeatability, use an </span><span style="font-size:11pt;font-weight:bold;">acid test kit</span><span style="font-size:11pt;"> to determine the acid content. It’s always possible to add a little more, so err on the side of caution.</span></p><p style="margin-bottom:2pt;"><span style="font-size:11pt;">-- OPTIONAL: Add </span><span style="font-size:11pt;font-weight:bold;">tannin</span><span style="font-size:11pt;">. Tannin helps the cider’s “grip” and structure. These are sensations more than flavors, but can add wonderful complexity to the finished product. Start small, (1/2 tsp per 5 gallons); it doesn’t take much to get the desired effect. Remember, it’s always possible to add a little more, so err on the side of caution.</span></p><p style="margin-bottom:6pt;"><span style="font-size:11pt;font-weight:bold;">3. PITCH YEAST</span></p><p style="margin-left:3pt;margin-bottom:6pt;"><span style="font-size:11pt;">-- If you added pectic enzyme and yeast nutrient wait 1 hour before pitching yeast.</span></p><p style="margin-left:3pt;margin-bottom:6pt;"><span style="font-size:11pt;">-- <a href="https://www.craftedbottler.com/categories/cider-yeast/4489240000000089955" title="Several types of dry Cider yeast are available from Fermentis, Mangrove Jack’s, and Cider House Select." rel="">Several types of dry Cider yeast are available from Fermentis, Mangrove Jack’s, and Cider House Select.</a></span></p><p style="margin-left:3pt;margin-bottom:6pt;"><span style="font-size:11pt;">--Wine yeasts, such as Lalvin K1-V1116 or or Red Star Cote des Blancs are also popular. They are best for higher alcohol apple wines that have over 10% ABV </span></p><p style="margin-left:3pt;margin-bottom:6pt;"><span style="font-size:11pt;">-- Many people also use Beer yeasts to impart specific characters and “spice”</span></p><p style="margin-left:3pt;margin-bottom:6pt;"><span style="font-size:11pt;">--Experiment and determine what you like most.</span></p><p style="margin-bottom:6pt;"><span style="font-size:11pt;font-weight:bold;">4. FERMENTATION</span></p><p style="margin-left:3pt;margin-bottom:6pt;"><span style="font-size:11pt;">--Allow the cider to ferment to dryness. </span></p><p style="margin-left:3pt;margin-bottom:6pt;"><span style="font-size:11pt;">--If the fermentation seems sluggish, smells like rotten eggs or burning matches; add yeast nutrient, 1/4 tsp at a time. Use caution when adding nutrient, as the trapped CO2 in the cider can react with the nutrient, causing an overflow of liquid. </span></p><p style="margin-left:3pt;margin-bottom:6pt;"><span style="font-size:11pt;">--When the gravity is reliably stable, usually around 0.996-1.000, the cider is almost ready to be racked. Allow it to sit on the yeast sediment for a little longer - up to three weeks, to help clean up any off-flavors that were produced during fermentation.</span></p><p style="margin-bottom:6pt;"><span style="font-size:11pt;">&nbsp;</span><span style="font-size:11pt;font-weight:bold;">5. CONDITIONING / SECONDARY FERMENTATION</span></p><p style="margin-left:3pt;margin-bottom:6pt;"><span style="font-size:11pt;">--Rack the cider into a sanitized carboy or similar vessel that will accommodate the volume with no or minimal head space. At this point, the process is largely dependent upon taste. As the cider ages, the flavors will mellow and come into condition, the yeast and other sediment will slowly settle out, and everything will generally improve. </span></p><p><span style="font-size:11pt;font-weight:bold;">6. FINING</span></p><p style="margin-left:3pt;margin-bottom:6pt;"><span style="font-size:11pt;">--If the cider is still cloudy and you prefer it to be clear, use </span><span style="font-size:11pt;font-weight:bold;">Sparkolloid</span><span style="font-size:11pt;">, to help it clarify. Follow the directions provided on the package.</span></p><p style="margin-bottom:6pt;"><span style="font-size:11pt;font-weight:bold;">7. BOTTLING</span></p><p style="margin-left:3pt;margin-bottom:6pt;"><span style="font-size:11pt;">-- This recipe is for Still Cider. Add 1/4 Potassium Metabisuphite to the 5 gallons. A sink or bucket works well, but make sure no water will get into the containers.</p><p style="margin-bottom:6pt;">Warming the honey ahead of time will help liquefy any solid crystals in the honey and make it easier to pour into the fermenter.</p><p style="margin-bottom:2pt;"><span style="font-weight:bold;">Sanitize</span></p><p style="margin-bottom:6pt;">Thoroughly sanitize all equipment and tools that will come into contact with the ingredients.</p><p style="margin-bottom:2pt;"><span style="font-weight:bold;">Add Water</span></p><p style="margin-bottom:6pt;">Fill the clean and sanitized primary fermenter with 2-3 gallons water. </p><p style="margin-bottom:2pt;"><span style="font-weight:bold;">Add Honey</span></p><p style="margin-bottom:2pt;">Remove the honey from the warm water bath and proceed to add it to the half-full fermenter.</p><p style="margin-bottom:6pt;">Using a sanitized spoon, mix the honey into the water until dissolved.</p><p style="margin-bottom:2pt;"><span style="font-weight:bold;">Top Off</span></p><p style="margin-bottom:6pt;">Add enough water to the honey and water mixture in the fermenter until you reach a total volume of 5 gallons.</p><p style="margin-bottom:2pt;"><span style="font-weight:bold;">Mix Thoroughly</span></p><p style="margin-bottom:6pt;">Use a sanitized spoon and mix until the honey and water is completely mixed. If after mixing you notice a darker layer on the bottom half of the carboy and lighter layer on top, then the honey is not fully dissolved.</p><p style="margin-bottom:2pt;"><span style="font-weight:bold;">Read Gravity</span></p><p style="margin-bottom:6pt;">Before pitching the yeast, pull a sample of the must and take a gravity reading using a hydrometer. This will allow you to measure the original gravity and calculate the alcohol content after fermentation.</p><p style="margin-bottom:6pt;">Record Original Gravity: _____________</p><p style="margin-bottom:6pt;">Gravity should be between 1.075 - 1.100. Add more honey to increase or more water to decrease.</p><p style="margin-bottom:6pt;">Do not return the sample to the fermenter because it can cause infection.</p><p style="margin-bottom:2pt;"><span style="font-weight:bold;">Aerate the Must</span></p><p style="margin-bottom:6pt;">It is crucial to provide enough oxygen to the yeast at the point of pitching. While mixing the honey into the water will provide a lot of oxygen, you may want to also use a sanitized drill mounted Mix-Stir to further oxygenate the must.</p><p style="margin-bottom:2pt;"><span style="font-weight:bold;">Pitch Yeast &amp; add Nutrients</span></p><p style="margin-bottom:6pt;">Once the must is in the 60-70°F range;&nbsp; add <span style="font-weight:bold;">2 gm DAP &amp; 4 gm Fermaid-K</span>. Stir. Next add <span style="font-weight:bold;">Yeast</span> according to package directions.</p><p style="margin-bottom:2pt;"><span style="font-weight:bold;">Seal Fermenter</span></p><p style="margin-bottom:6pt;">Tightly secure the lid and put an airlock in the hole of the lid. Fill Airlock.</p><p style="margin-bottom:2pt;"><span style="font-weight:bold;">Store the Fermenter</span></p><p style="margin-bottom:6pt;">With the yeast pitched and the primary sealed, place the fermenter in a location where the temperature will be within the range of 60-70°F, with lower temperatures being more favorable. </p><p style="margin-bottom:6pt;"><span style="font-weight:bold;">Days 1-8 fermentation</span></p><p style="margin-bottom:2pt;">Use the following schedule to tend to your mead during primary fermentation. Everyday, stir using a sanitized spoon, very carefully and slowly or you will end up with a volcano. Reseal the lid, replace and refill the airlock when you are finished.</p><p style="margin-left:3pt;margin-bottom:2pt;"><span style="font-weight:bold;">Day 1</span>: Stir.</p><p style="margin-left:3pt;margin-bottom:2pt;"><span style="font-weight:bold;">Day 2</span>: Stir and carefully add another <span style="font-weight:bold;">2 gm DAP &amp; 4 gm Fermaid-K</span>.</p><p style="margin-left:3pt;margin-bottom:2pt;"><span style="font-weight:bold;">On Days 3, 5, 7 and 8</span>: Stir.</p><p style="margin-left:3pt;margin-bottom:2pt;">On <span style="font-weight:bold;">Days 4 and 6</span>: Stir and add <span style="font-weight:bold;">6 gm Fermaid-O </span>on each day. </p><p style="margin-bottom:6pt;"><span style="font-weight:bold;">Days 9-14: fermentation</span></p><p style="margin-left:3pt;margin-bottom:6pt;">Continue to monitor the airlock. When the bubbling of the airlock slows down or ceases completely; primary fermentation is nearly complete. At this point, the mead can be transferred off the yeast into a secondary carboy where it can age for a longer period of time. </p><p style="margin-bottom:6pt;"><span style="font-weight:bold;">SECONDARY FERMENTATION</span></p><p style="margin-left:3pt;margin-bottom:6pt;">Rack the mead into a sanitized 5 gallon carboy or similar vessel that will accommodate the volume <span style="font-weight:bold;">with very minimal head space</span>. At this point, the process is largely dependent upon taste and clarity. As the mead ages, the flavors will mellow and come into condition, the yeast and other sediment will slowly settle out, and everything will generally improve. </p><p style="margin-bottom:6pt;"><span style="font-weight:bold;">BOTTLING</span></p><p>After the mead has dropped clear and fermentation is complete, it’s time to package! The only surefire way to ensure fermentation is complete is with your hydrometer. If gravity readings are consistent over the course of 1-2 weeks, it is safe to assume the yeast have called it quits.</p><p>Mead can be packaged in bottles or kegs just like beer. This recipe is for a “still” mead so there is no bottle priming or forced carbonation necessary.</p><p>&nbsp;</p></div></div></div></div></div></div>

The water should be hot enough to steep the tea but does not have to be boiling.</span></li><li style="text-align:left;"><span style="font-size:16px;">Remove pot from heat and add tea bags or loose tea. Steep according to the directions on the tea package.</span></li><li style="text-align:left;"><span style="font-size:16px;">Stir the sugar into the tea until the sugar dissolves.</span></li></ol><p style="text-align:left;"><span style="font-size:16px;">NOTE: Using a metal tea ball to contain loose tea for making kombucha is acceptable. The tea ball&nbsp;<u>should be removed</u>&nbsp;before adding the SCOBY and starter tea, so the tea ball will not come into contact with the SCOBY.</span></p><ol start="4"><li style="text-align:left;"><span style="font-size:16px;">Cool the mixture to 68-85ºF. The tea may be left in the liquid as it cools or removed after the first 10-15 minutes. The longer the tea is left in the liquid, the stronger the tea will be.</span></li><li style="text-align:left;"><span style="font-size:16px;">Remove the tea bags or completely strain the loose tea leaves from the liquid.</span></li><li style="text-align:left;"><span style="font-size:16px;">Pour the sweetened tea into a clean glass jar.</span></li><li style="text-align:left;"><span style="font-size:16px;">Add starter tea from a previous batch to the liquid. If you do not have starter tea, distilled white vinegar may be substituted. Stir with plastic or wooden spoon.</span></li><li style="text-align:left;"><span style="font-size:16px;">Add an <a href="https://www.craftedbottler.com/products/scoby/4489240000001842169" title="active kombucha SCOBY" target="_blank" rel="">active kombucha SCOBY</a> to the jar.</span></li><li style="text-align:left;"><span style="font-size:16px;">Cover the jar with a tight-weave towel or coffee filter and secure with a rubber band.</span></li><li><div style="text-align:left;"><span style="color:inherit;font-size:16px;">Allow the mixture to sit undisturbed at 68-85°F, out of direct sunlight, for 7-30 days, or to taste. The longer the kombucha ferments, the less sweet and more vinegary it will taste.</span></div><ol><li style="text-align:left;"><span style="font-size:16px;">When making a fresh batch of kombucha with vinegar we recommend letting it sit 14 days. This is called the first ferment.</span></li><li style="text-align:left;"><span style="font-size:16px;">After 14 days follow steps 1-10 again. On Step 7 use starter tea from the first ferment; do not use vinegar. This is called the second ferment and produces a much sweeter kombucha.&nbsp;</span></li><li style="text-align:left;"><span style="font-size:16px;">Let sit only 5-7 days then flavor, bottle, and make another batch of kombucha. This is the continuous method of kombucha brewing.</span></li></ol></li></ol><p style="text-align:left;"><u><span style="font-size:16px;">Flavoring and Bottling</span></u><span style="font-size:16px;">:</span></p><ol><li style="text-align:left;"><span style="font-size:16px;">Kombucha can be enjoyed plain right off the top of the jar, but most people prefer it flavored and carbonated. When the kombucha has finished culturing it is time to flavor and bottle.</span></li><li><div style="text-align:left;"><span style="color:inherit;font-size:16px;">There is no limit to the flavoring possibilities, extracts, fresh fruit, jam, herbs, 100% fruit juices or a combination of them can be used. The following are good guidelines to start; you can then adjust each consecutive batch with more or less to your taste.</span></div><ol><li style="text-align:left;"><span style="font-size:16px;">Extracts vary widely, be sure to use 100% natural extracts, start with ¼ tsp. extract to 16 oz. tea.</span></li><li style="text-align:left;"><span style="font-size:16px;">100% fruit juice is our favorite way to flavor - start with ¼ cup 100% fruit juice to 16 oz. tea.</span></li><li style="text-align:left;"><span style="font-size:16px;">Fresh fruit can be cut and placed in the bottom of the bottle use anywhere from 2 Tbsp. - ¼ cup for 16 oz. tea</span></li></ol></li><li style="text-align:left;"><span style="font-size:16px;">For a carbonated kombucha, bottle it in a Grolsch-style bottle or other tightly-sealed container, refrigerate after 4 days or the bottle may be at risk of rupturing from too much carbon dioxide.</span></li><li style="text-align:left;"><span style="font-size:16px;">Retain the SCOBY and enough starter tea from the bottom of the jar to use for the next batch.</span></li></ol></div></div></div></div></div></div></div>
